Carne en su Jugo

This is a traditional dish from my homestate of Durango, Mexico, but can be found anywhere in the northern region.

Carne en su Jugo literally translated to "meat in its juice" its a hearty stew-like guisado that goes insanely good with pinto beans and flour tortillas. this is Mexican comfort food galore.

Ingredients

  • 1 pack of la Venganza vegan carne asada

  • 2 tablespoon of canola oil

  • 1\2 cup water

  • 5 tomatillos

  • 2 Roma tomato (sliced into chunky strips)

  • 1 head of garlic

  • 6 jalapeños (deseeded, deveined, and sliced into thin strips)

  • 1 diced onion

  • 1 potato (diced)

  • Salt (about 2 teaspoons

  • 1\4 cup of cilantro

(makes enough for 4 people)

Directions
Heat oven to 450 degrees and roast tomatillos and garlic.

Once roasted blend with half cup of water and put aside.

In a deep skillet heat 2 tablespoon of oil on medium heat and cook potatoes till soft add 1 package of vegan asada and cook till brown.

Halfway through add onions, jalapeño, and tomato and cook till onions are translucent.

Add tomatillo blend and incorporate into mixture. cook mixture on medium heat for approximately 5- 10 minutes until it has a juicy stew-like consistency.
