Chili Colorado
Chile Colorado is a staple of Northern Mexican cuisine, because North Mexican gastronomy is based around the beef that is raised there.
Your’e bound to find Chile Colorado in most towns and pueblos. each family using local ingredients and slight differences in the cooking.
Ours makes use of only two types chillies that provide a signature rounded flavor to Chile Colorado
Ingredients
1 pack of la venganza vegan carne asada
2 tablespoon of conola oil
5 cloves of garlic
2 teaspoons of dried oregano
4 Guajillo chilies
4 New Mexico chilies
1 diced onion
1\2 teaspoon cumin
Salt (about 2 teaspoons)
1 and 1\4 cups hot water to reconstitute chilies
(makes enough for 4 people)
Directions
In a deep skillet heat tablespoon of oil on medium heat and lightly pass dried chilies through oil (the chilies will brighten in color).
Once fragrant and bright place in hot water to reconstitute the dried chilies, once plump and softened, transfer into a blender with cumin, oregano, salt and remaining chile water.
Brown 1 package of asada with onions and garlic in 1 tablespoon of oil and cook till translucent.
Blend the chile mixture and strain directly into a saucepan stirring mixture to incorporate sauce throughout.
Reduce by ¼ to ½ of volume.
Serve with beans, rice, and enjoy.
